Hello my lovely readers!

I wanted to share with you a little recipe book that I helped to translate. The next one is coming out in July so watch this space! All these recipes are traditional recipes from the area we live in right now. The first book was published in autumn. I will share my take on one of my favourite recipes from the book with you.

Pie with rhubarb

1250g of flour (I prefer almond flour), 3 eggs, 500g of margarine, vanilla essence and agave syrup.

The topping (optional): 8 whipped eggs, 5 tbsp of agave syrup and 350g of flour.

Prepare the dough with all the ingredients and put it into the refrigerator for 30 minutes. Roll the dough until flat, add chopped rhubarb on it. Mix together the topping ingredients and pour the mixture on the dough. Then pop it into the oven for about 20 minutes at 180C.

All the recipes are quite easy to follow and available in English, Estonian and Russian. Also, they can easily be adapted to your dietary requirements.
